One thing I hate about getting older is how easily I put on weight. I was on vacation for just over a week, and I cringed when I saw the number on the scale. I'm doomed to snacking on celery!

Just add a dab of ranch dressing or peanut butter and that celery will be delish. I feel your frustration though. I could drink as much beer as I wanted and still stay fit in my 20s, but in my 30s it takes more effort. Well, was the vacation nice at least?
Well, if it wasn't for my strict exercising routine - I jog up to 5 times a week - I would have gained a lot of weight. I am working on reducing my portions, so my effort continuously bears fruit.

I'm now trying to be way more careful about carbs while increasing lean protein, especially at night.

Try tracking more specifically what you suspect makes you put on weight. For me, I noticed that salty soups and flour-heavy desserts have an effect.
You have to get moving regularly, even if it's just walking (preferably up at least one good hill) or taking an extra flight of stairs.
You had more cheat days than recommended. I find it harder to put on weight than lose it, so it is time for you to put in some work, just like @whaleshark recommends.

I know that there are naysayers about this, but eat lighter at night. Make peace with being mostly full at dinner, not bursting (still my struggle). Up your water intake starting later in the afternoon.
